Can you image what summer would be like without coconut? Try this recipe for vegan and gluten-free coconut cubes if you appreciate the flavour and scent of coconut coupled with chocolate.
Ingredients needed:
For dark skin:
- 80 grams of ground walnuts
- 80 grams of ground oatmeal
- 10 fresh dates
- 7-10 tablespoons of water
- 1 full spoon of cocoa
For light skin:
- 50 grams of ground oatmeal
- 25-30 grams of coconut flour/shredded coconut
- 1 ripe banana
- some water

For the glaze:
- 30-40 grams of chocolate
- a little oil
- coconut
Method of preparation:
1. Soak the dates in boiling water for 20 minutes. Then rinse them, add 7 tablespoons of water, and thoroughly ground them. Combine the nuts, muesli and cocoa. Add a little more water if necessary to achieve a compact but firm mixture. Place the resultant mixture in a bowl lined with baking paper.
2. For the lighter crust, combine the oatmeal, banana and coconut in a food processor, add a teaspoon of water (just until all the ingredients are combined) to get a creamy texture. Apply the mixture on the dark skin. For the glaze, melt the chocolate in steam, adding a few drops of oil. Cover the cake with chocolate, sprinkle with coconut and put it in the fridge to rest for a few hours. Cheers!
