Homemade Kimchi

Ingredients

  • 1 medium head of napa or green cabbage, shredded
  • 1 bunch of green onions, sliced
  • 1 tablespoon ginger root, grated
  • 3 cloves garlic, crushed
  • 1 cup carrots, shredded
  • ¼ cup water kefir
  • ½ teaspoon Korean red chili pepper powder or regular red chili pepper flakes
  • ½ tablespoon of sea salt

Instructions:

Combine all the ingredients in a bowl, then refrigerate for 30 minutes. The mixture should then be transferred to a jar after being mashed with a spoon or a potato masher to make it moist. In order for the liquid to rise to the top, press the components. In a jar, leave 1 inch of room, then cover with a lid.

Place the jar aside for 3 to 7 days, checking the liquid level every day. It should be kept in the fridge.
