Ingredients:
- 1-pound chicken breasts
- ¼ cup cottage cheese – 2
- 1¬½ cups fresh baby spinach
- 1 teaspoon olive oil
- Paprika
- Salt
- Pepper
Method of preparation:
At 400 degrees Fahrenheit, turn on the oven (200 degrees Celsius or Gas Mark 6). The spinach should then be added to a sauté pan with olive oil and cooked for 3 to 5 minutes. Then add the cottage cheese, whisk it in, and boil it for one more minute before setting it aside to cool.
After that, slice the chicken breasts into rectangles approximately 75% of the way through, 1 centimeter (0.39 inches) apart. Fill the cuts with the ricotta and spinach mixture.
To improve the flavor and color, season with salt and pepper and top with some red paprika. Bake for 20 to 25 minutes, or until the cheese is melted and the liquids are clear.
