Ingredients:
- 1 teaspoon turmeric powder
- 1 1/2 cup coconut milk
- 2 apples, cored and grated
- 2 cups red lentils
- 1 teaspoon coconut oil
- 1 teaspoon cumin
- 1 onion, diced finely
- 1 1/2 teaspoon cinnamon
- 1 teaspoon salt
- 2-3 cup hot water
Method of preparation:
Red lentils should first be rinsed under cold water. In a pot, heat the coconut oil, add the onions, and sauté for a few minutes or until they are tender and golden. Let them drain.
After that, boil the mixture for 2 minutes while adding the turmeric and apples. Add the lentils and water, stirring continuously. The mixture should be brought to a boil before being simmered for 15 minutes.
After that, boil the mixture while adding the spices and coconut milk until the lentils are tender. If you’d like it thinner, add a cup of water and simmer it for an additional two hours.
